Cuban Food: Flan de Queso y Pina / Cheese and Pineapple Flan

Ingredients: 
1 (8 oz. ) pkg cream cheese, softened
6 eggs
1 can evaporated milk
1 can sweetened condensed milk
1 small can crushed pineapple, thoroughly drained

Caramel:
1 cup sugar
3 tb. sugar

Directions:

Heat oven to 325 degrees.

In a flan mold put sugar and water.  Heat on high until mixture starts to turn into a light caramel color.  Remove from heat. Carefully roll flan mold in a circular motion until sides and bottom are covered with caramel mixture.  Set mold aside to cool.

In a bowl mix softened cream cheese until smooth. Add eggs one at a time, beating after each addition. Next add the evaporated milk and mix thoroughly, sweetened condensed milk and also mix thoroughly.  With a spatula blend in the drained crushed pineapple.  Once completely blended pour into cooled flan mold.

Place mold inside a larger pan and pour hot water up to 3/4 of the flan mold.  Place on bottom rack of oven.  Bake for 1 hour and 45 minutes.  Take out of the oven, remove flan mold and let cool completely before refrigerating.  Best if refrigerated overnight.
